Hans Stucki

Hans Stucki (* 1929 in Ins ; † February 5, 1998 in Basel ) was a Swiss chef.

Life

In 1959 Stucki moved to Basel with his wife Susi and leased the Bruderholz in the Bruderholzallee. After ten years they bought the house and remodeled it. The Bruderholz has been awarded two stars in the Michelin Guide since the 1970s .

Stucki never cooked in a fashionable way and that's why it stayed modern. In the foreword to the cookbook Switzerland, Culinary Highlight , he wrote:

“The kitchen as a feast for the eyes, nose and palate. Inextricably linked. Inseparable the result of endless experiences at the stove. Because: Large kitchens are not created overnight! That is why it is not only unique, but also always elitist! ... And: Why should the guest go from restaurant to restaurant and always be presented with things that he does not understand? Just because fashion wants it to always be presented with the same thing? Let's never forget: Even in Switzerland, an attractive landscape consists of a large number of regions. These only lead to a multitude of real culinary worlds of experience when these are also rooted in the regions and their products. ... "

Shortly before he died of cancer, he handed over the Bruderholz restaurant to Pierre Buess and Stucki's pupil Jean-Claude Wicki. Buess and Wicky continued the tradition. Wicky left the Bruderholz in 2003, Buess sold it in 2008. The restaurant has been called Stucki since 2008 and is run by Tanja Grandits , and the staff has remained constant.
