In the 18th century there were many small breweries in Heidelberg, most of which produced beer for their own economy. Most of these breweries had already closed by 1900. In the end, only one brewery remained in Heidelberg, today's Heidelberger Brauerei GmbH. This was first mentioned in a document in 1753. At that time, the Müller couple acquired the property at 115 Hauptstrasse , today's parent company, "Güldenes Schaf".

Over the years, the brewery's property grew significantly and the owners changed several times. In the end, the Kleinlein half-brothers acquired the brewery and the inn in 1820 and built a new brewery on the property in Bergheimer Strasse in 1870. In 1884 the company “Heidelberger Aktienbrauerei vorm. Kleinlein Heidelberg ”founded. As Kleinlein AG, the brewery bought five springs at Königstuhl in 1934 , with which the new beer brand “Schloßquell” was brewed. In 1968 Schultheiss-Brauerei AG, Berlin, became the majority shareholder of Schlossquellbrauerei AG, the brewery was incorporated into the group and was able to continue to exist under the leadership of Berlin. After that there were some changes of name: "Schlossquellbrauerei GmbH", "Heidelberger Schlossquellbrauerei GmbH", up to today's "Heidelberger Brauerei GmbH".

In 1996 Werner Kindermann bought the "Heidelberger Schlossquellbrauerei GmbH" and its restaurants. Thus, the brewery came back into private ownership. In 1999 he then built one of the most modern breweries in Europe in the Pfaffengrund district . In 2005, the managing director of Heidelberger Brauerei GmbH Michael Mack acquired the company.

The Heidelberger brewery with 23 employees produces around 50,000 hl of beer per year and thus achieves sales of 5.5 million euros (as of 2010). The 14 types of beer are sold almost exclusively in the region, 8% are exported (including to Japan, France, Italy, Ireland and Malta). Half of the turnover is achieved in the catering and retail trade.
