Herring potatoes

Herring potatoes are a classic casserole dish in Swedish, as well as Dutch and Rhenish cuisine . It is a layered potato casserole with salted herring often, young herring , or Bismarck herring . There are different recipes for herring potatoes, but they always use potatoes and herrings as the basic ingredients.

For the preparation of the casserole, sliced jacket potatoes or thinly sliced ​​raw potatoes are layered with the rinsed herrings in a casserole dish that has been greased and sprinkled with breadcrumbs , with the potatoes usually forming the bottom and top layer. A meat broth or a sauce with milk, cream and cheese or egg yolk is usually poured over the casserole . In some recipes, cooked or raw ham is also added to the sauce, and onion rings or glazed onions can also be layered between the potatoes and herrings. Cheese can be grated on top again and breadcrumbs added to create a crust. Then it is gratinated in the oven .

A cold sauce made from sour cream and crème fraîche with chives can be served with the herring potatoes. A green salad is usually served with the herring potatoes.

Culture

Salted herrings for preservation play a central role in most kitchens in Northern Europe, especially in Scandinavia, Northern Germany and the Netherlands. Due to the shipping on the Rhine, the Dutch herring made it to the Rhineland and thus became part of the Rhine cuisine.
