Duchess potatoes ( French pommes duchesse ) are a side dish of classic French cuisine .

To prepare it, mashed potatoes are mixed with egg , salt and pepper , or , depending on the recipe, with parsley and formed into round cookies that are fried in butter until golden brown.

Alternatively, the mixture is spread decoratively with the piping bag on a fireproof platter, coated with egg yolk and browned in the oven. Duchess potatoes prepared using piping bags are often also referred to as crowns and are also sold under this name as frozen food .
