Hippolyte Mège-Mouriès (born October 24, 1817 in Draguignan , † May 31, 1880 in Paris ) was a French chemist and inventor of margarine . On behalf of the French government under Napoleon III. As a substitute for butter, he developed a spreadable fat that was primarily intended to provide inexpensive food for the military . In 1871 Mège-Mouriès sold his invention to the Dutch company Jurgens, which later became part of Unilever .
