Hubert Wallner (cook)

Hubert Wallner (* 1976 in Steyr ) is an Austrian chef .

Life

Born in 1976 as the son of a Lower Austrian hotelier family (Grüner Baum, 4-star hotel in St. Valentin) with an in-house butcher shop, he gained his first cooking experience with his mother, who was also a passionate cook.

After compulsory schooling, the 3-toque cook graduated from the hotel management school at WiFi St. Pölten and completed it with a license and trainer examination. He also passed the exams as a diet and hospital cook and the master chef examination with distinction and was trained as a tourism specialist.

As a young chef, he learned the two renowned chefs Heinz Hanner , Hans Haas , Hermann Huber and Martin Sieberer and in the 4 star hotels Schwarzer Adler / Leonding, Wirlerhof / Galtür and Hotel Übergossene Alm / Salzburg. From 1999 to 2003, through the positions of Gardemanger, Chef Saucier and Sous Chef, he came to Martin Sieberer's Restaurant Paznauner Stube in the 5-star Hotel Trofana Royal in Tyrol.

After two very successful years in Switzerland, his commitment as head chef at the Caramé restaurant brought him back to Austria. There he earned the title of “Newcomer of the Year 2007” and for three years 16 points in Gault Millau, 4 stars and 91 points in the A la Carte and 3 forks 91 points in the Falstaff. After a season at the 5 star designer hotel Aenea, he found his home in the See Restaurant Saag in 2010. In 2018 Hubert Wallner and his wife Kerstin opened the second restaurant directly on Lake Wörthersee in Dellach, the Bistro Südsee by Hubert Wallner.

Hubert Wallner was named “Chef of the Year 2020” by Gault & Millau.
