Hans Haas (cook)
Hans Haas (born April 2, 1957 in Wildschönau , Tyrol ) is an Austrian chef . He works as head chef at the Munich restaurant Tantris , which Haas has been awarding two Michelin stars since 1991 . Haas' kitchen attaches great importance to regional and natural foods.
Life
Haas comes from a Tyrolean farming family. He completed his training at the Gasthof Kellerwirt in Wildschönau and then moved to the Hotel-Restaurant Bachmaier in Weissach . He then spent two years in the Hotel-Restaurant Erbprinz in Ettlingen, before moving to Paul Haeberlin's restaurant in Illhaeusern in Alsace as Chef de Partie .
In 1982 Eckart Witzigmann brought him to his restaurant Aubergine in Munich as a sous chef . From there in 1987 he moved to the Brückenkeller restaurant in Frankfurt am Main as head chef .
Since 1991, Hans Haas has succeeded Eckart Witzigmann and Heinz Winkler as head chef at the Munich restaurant Tantris , where he has been consistently awarded two stars in the Michelin Guide .
Haas has received numerous awards for his culinary art. In 1987 he took third place at the Bocuse d'Or , the unofficial world championship for young chefs. The Gault Millau named him 1995 Chef of the Year, 1999 Haas received the Culture Award European Regional Prize . His kitchen in the Tantris has been awarded two Michelin stars and 18 points in the Gault Millau, the gourmet magazine Der Feinschmecker rated the Tantris kitchen he runs with five out of five possible “Fs” and awarded Haas the “Feinschmecker-Gastro- Award ”in the“ Lifetime Achievement ”category.
The Schlemmer Atlas has been giving it the top grade of five cooking spoons since at least 2013.
Haas also runs a cooking school in Munich. In May 2019, the operators of the Tantris announced that Hans Haas would be leaving the restaurant at the end of 2020.
