Rasmus Kofoed (born August 22, 1974 in Næstved ) is a Danish chef . The Copenhagen restaurant Geranium , which he runs with Søren Ledet , has had three stars in the Michelin Guide since 2016 .

Life

In the Danish documentary Michelin - fortællinger fra køkkenet from 2017, he tells that he found his inspiration in his childhood and youth. He grew up with herbs, dried nettles and rose hip flowers. They picked mushrooms, caught crabs and smoked eel they caught themselves with juniper berries. Kofoed was trained as a chef at the Hotel d'Angleterre in Copenhagen . In 1997 he completed his training and then worked at the Scholteshof in Stevoort , Belgium , a two-star restaurant. In 1998 he moved to Krog's Fiskerestaurant in Copenhagen, which he left the following year in favor of the two-star restaurant Kommandanten . From 2000 he worked for two years, for the first time as a chef in Tyven, cocci, Hans Kone og Hendes Elsker . This was followed by a two-year job as head chef at Krogs Fiskerestaurant , where Ledet was his sous chef . Afterwards he was head chef in the Restaurant Gastronomique for a year before he returned to his former training center at the d'Angleterre in 2005 as head chef. In 2007 he and Ledet opened the first geranium in Kongens Have , which was awarded its first Michelin star the following year.

The geranium inspired Kofoed and Ledet for their own restaurant, which was supposed to be “sensual and green” ( “sanselig og grøn” ). On September 22nd, 2010 they opened the Geranium, which in 2012 received its first Michelin star . At times, Kofoed often used geraniums as an ingredient. From 2012 he only used it as a symbol for his kitchen. Kofoed appreciates the Vietnamese cuisine , which uses a lot of fresh herbs. At home, his partner usually cooks, and when he cooks it is mostly vegetarian. In his restaurant, he also cooks with meat, but without “stuffing it into himself” ( “guffer det i mig” ). In 2011 a 45-minute documentary called Verdens Bedste Kok about Kofoed's third participation at the Bocuse d'Or was completed and presented at the Copenhagen documentary film festival CPH: DOX .

He and his partner Maja have a daughter.

Prizes and awards

  • In 2003 he was voted Danish Chef of the Year. At that time he was working at Krogs Fiskerestaurant .
  • In 2004 he won the Nordic Championship in Stockholm.
  • In 2005 he won bronze at the Bocuse d'or.
  • He also won Nordens bedste fiskeret .
  • In the same year he was awarded a diploma by Prince Henrik.
  • In 2006 he won Årets dessert ( dessert of the year) with øllebrød med geranium (a soup made from beer and bread).
  • In 2007 he won Årets hovedret .
  • He also won silver at the Bocuse d'or.
  • In 2010 he won the European semifinals of the Bocuse d'Or.
  • In 2011 he won the Goldbocuse at the Bocuse d'Or in Lyon.
  • In 2013 he was a juror in the selection of the Danish participant for the European semifinals of the Bocuse d'Or 2014.
