Heinz Winkler (born July 17, 1949 in Brixen in South Tyrol / Italy ) is an Italian cook and culinary author who has lived and worked in Germany since 1978. Winkler “presents one of the best classically sound kitchens in Europe, full of lightness and elegance”. His cuisine is known for combining "sophistication" with "down-to-earth" spirit. With this, Winkler succeeded in becoming the most awarded chef in Germany.

Life

Winkler grew up as the youngest of eleven siblings in a mountain farming family in South Tyrol. At the age of three he lost his mother in a lightning strike. At the age of 14 he began an apprenticeship as a chef in Bolzano : “I did work for three.” He then worked for seven years in various hotels and restaurants in Germany, France, Italy and Switzerland. He held his first post as Chef de Cuisine from 1973 to 1977, during which time he worked in the Schlosshotel Pontresina and Kulm Hotel in St. Moritz in the winter season and in the Hotel Bad Schachen in the summer season. Winkler then spent a year with Paul Bocuse .

From 1978: Tantris

In 1978 Winkler succeeded chef Eckart Witzigmann in the Munich restaurant Tantris and stayed until 1991. Here he was named "Chef of the Year" by the Michelin Guide in 1979 and defended his second Michelin star in Tantris. In 1981, under his management, the Tantris was awarded three Michelin stars, the second restaurant after Witzigmanns Aubergine (and at the same time with Herbert Schönberner ). The Tantris kept the three stars for ten years, and the restaurant also received 19.5 points in Gault-Millau . During this time Winkler developed his concept of Cuisine Vitale , which is "based on old recipes and lots of fresh herbs", "freed from the earthly gravity of some top cuisine":

Since 1991: Heinz Winkler residence

Since 1991 Winkler has been the owner and head chef of the Hotel Residenz Heinz Winkler in Aschau im Chiemgau . Here, too, his restaurant was awarded three Michelin stars from 1994 to 1995 and from 2001 to 2008. Overall, his restaurants with 20 vintages were awarded the second most three stars (after Harald Wohlfahrt's restaurant ).

From 2003 to 2004 Peter Knogl was the second head chef in the restaurant, then Alfred Friedrich . From 2008 he was assisted by Stephan Brandl as head chef. Steffen Mezger took over this role in May 2014 . His son Alexander Winkler (* 1979) has been the restaurant manager since 2012. His wife from his first marriage also works in the company.

In 2001 Winkler, who has also been Commissaire Generale of the international chefs' association Euro-Toques since 1994, received the Federal Cross of Merit for his services to the reputation of German gastronomy abroad. From 2007 to 2009, Heinz Winkler was also the patron of the Jeroboam restaurant in the Ritz-Carlton Moscow . In 2014 he celebrated his 50th anniversary at the stove.

Private

Winkler has two grown sons from his first marriage and one son from his second marriage (* 2009). In 2012 his son Alexander (* 1979) became restaurant manager in the "Residenz Heinz Winkler". His first son Manfred (* 1968) also worked in the restaurant business. In 2013 he died of a stroke at the age of 45 .
