The  Gault-Millau / Gault & Millau  is a restaurant guide  named after its editors / founders  Henri Gault  (1929–2000) and  Christian Millau (1928–2017)  . Alongside the Michelin Guide, he is considered to   be the most influential restaurant guide of French origin. He awards the Gault Millau chef's hat, the most coveted award in haute cuisine alongside the Michelin stars  . In contrast to the Michelin Guide, the Gault-Millau is not limited to a list of recommended restaurants with brief descriptions, but offers a points system and detailed restaurant reviews.

history

The Gault Millau was founded in France by journalists Henri Gault and Christian Millau 1969th The first Gault Millau Austria appeared in 1980, the first Swiss edition in 1982, the first German version in 1983. The German-language editions were founded by Michael Reinartz, who was the publisher of Guide Austria until 2005. 1986 Gault left Gault Millau .

The Gault Millau brand is now owned by a holding company. In January 2019, its previous owner, the French Côme de Chérisey, who had previously been CEO of the company for seven years , sold all of his shares to investors from Russia and left the company. Jacques Bally, who previously held a managerial position in the company, became the new director.

Gault Millau Germany

The Gault Millau Germany has since 1983 first by the Munich-based Christian Verlag GmbH laid. Manfred Kohnke was editor-in-chief for 29 years, Patricia Bröhm took over this function in 2012 and Kohnke became editor . In autumn 2017, the Munich-based ZS Verlag GmbH took over the license, Bröhm remained editor-in-chief. At the end of November 2019, ZS announced that it would end its cooperation with Gault-Millau and instead publish the German restaurant guide Gusto in future . Among other things, the reason was: "For the planned digital conversion of the Gault & Millau brand, we [...] lacked the expected international support in the three years."

In addition to the restaurant guide, the Gault & Millau WeinGuide Germany has been published annually since 1993 , in which the best wine producers with up to five grapes and their wines are rated according to the global 100-point system.

In May 2020, the media group Hubert Burda Media announced that it had acquired the license. The project was assigned to the BurdaStudios division. Editor-in-chief and chief tester has been Christoph Wirtz since then. Otto Geisel has taken over the management of a newly established expert advisory board . There are plans to further develop the brand with new offers in the areas of magazines, online and moving images, including on the company's own food channel BonGusto .

Restaurant guide

The Gault-Millau assesses according to the French school grading system from 0 to 20 points. In fact, grades are awarded from 11 points (for “average cuisine”) to 19.5 points as “the highest mark for the world's best restaurants”. The actual top grade of 20 is not awarded in the German-speaking region - in the spirit of the founders Gault and Millau - because, according to their conviction, only God, but no one, can determine perfection. In the history of Gault & Millau, the highest score of 20 points has been awarded twice: to the restaurant of the Frenchman Marc Veyrat and the restaurant of the Dutchman Sergio Herman (these two restaurants are no longer run by these chefs today).

In addition to the points, chef hats (called “toques” in Austria) are awarded; with 13 and 14 points the restaurant receives one hat, with 15 and 16 points two, with 17 and 18 points three and from 19 points four hats. In Austria, a Gault-Millau award-winning chef is called a “Haubenkoch”. In common parlance there, this term has a similar status as the term “star chef”, which is widespread in Germany, for a chef who has received at least one Michelin star.

The points awarded (and, if applicable, chef's hats) only honor the chefs and their kitchen work. The service, the ambience and the wine culture of the restaurant are described in the text. This can be assigned to the journalistic form of presentation of criticism and can also be a slap .

Wine Guide

The Gault & Millau Wine Guide Germany has been published annually since 1993  . It was founded by Joel Payne and Armin Diel. Until 2009, the two acted as co-editors-in-chief; Joel Payne in this role up to and including the 2016 edition. With the change of the license to the Munich-based ZS Verlag GmbH, the journalist and wine expert Britta Wiegelmann took over the editor-in-chief and filled the team almost completely. The tasting team includes top-class experts such as  Master of Wine Janek Schumann, Germany's first sworn wine expert Otto Geisel, and the award-winning sommelier Natalie Lumpp . For the 2018 edition, the team examined and rated more than 11,000 wines. A total of 965 out of 1034 businesses made it into the book. The highest rating for wineries is five grapes, it stands for the award "world class". This category currently comprises 18 companies. Wines can achieve a maximum of 100 points. In the 2018 edition, this top grade was awarded for three dry wines for the first time.

Gault-Millau Germany has voted Chef of the Year since 1988 and Gault-Millau Austria since 1983. Since then, award winners have been:
