Nils Henkel

Nils Henkel (born October 8, 1969 in Kiel ) is a German chef .

Career

After completing his training in Eutin , Henkel moved to the “Le Jardin” restaurant in Hamburg in 1990 and to Landhaus Scherrer under Heinz Wehmann in Hamburg in 1991 . From 1992 further positions followed in Hamburg and Coesfeld .

In 1997, Henkel joined the Dieter Müller restaurant in the Schlosshotel Lerbach in Bergisch Gladbach as the second sous chef , which was one of the best restaurants in Germany with two Michelin stars (from 1998 to 2011 the restaurant received three stars). Here he became sous chef in 1999, and in 2004 Dieter Müller made him head chef with equal rights.

In autumn 2006, Henkel was accepted into the group of Jeunes Restaurateurs d'Europe . Since this award is otherwise only reserved for restaurant owners, the decision was justified as follows: "Due to his talent and the successful, long-standing work at the Schlosshotel Lerbach, Nils Henkel is significantly involved in the success of the restaurant and is foreseeable a worthy successor to Dieter Müller, if he takes over the patronage of the Dieter Müller restaurant and the cooking school of the same name in the future. "

Schwarzenstein Castle

After four years of joint kitchen management, Dieter Müller officially handed over management to Nils Henkel in February 2008. Also in 2008, Henkel was named “Chef of the Year” by Gault Millau . At the beginning of 2010 the “Restaurant Dieter Müller” was renamed “Gourmetrestaurant Lerbach”. At the end of 2014, the “Gourmet Restaurant Lerbach” was closed because the lease for the hotel and restaurant had expired. Afterwards, Henkel worked as a freelancer in the field of cooking seminars and product development.

From February 2017 to spring 2020, Henkel was head chef at Schwarzenstein Castle in Geisenheim . In November 2017, the restaurant was awarded its second Michelin star.

At the end of August 2020, Henkel will take over kitchen management and gastronomic responsibility for the Bootshaus restaurant in the Papa Rhein Hotel in Bingen .
