Jeunes Restaurateurs (JRE) is an association of young chefs in Europe . Founded in France in 1974, the aim of the association is to give new impetus to European culinary art. Under the motto “Never-ending Passion”, the JRE show in a total of 16 countries what they have in common: high culinary standards and the courage to innovate while at the same time maintaining regional culinary traditions and friendly exchange.

The German section of Jeunes Restaurateurs was founded in 1991 by 25 chefs. It currently has 77 members. In addition to Germany, there are sections in Belgium , Denmark , France , Great Britain , Italy , Ireland, Croatia , Luxembourg , the Netherlands , Austria , Switzerland , Slovenia , Spain , Poland , Romania and Australia . The association has around 350 members worldwide.

The organization is based in Paris .

Section Germany

philosophy

As an association in Germany, the Jeunes Restaurateurs stand for top cuisine at the highest level. As passionate restaurateurs and hosts, they strive for culinary perfection and to further develop their own culinary art. The focus is on respect for local traditions and products. The association lived values ​​such as sustainability and regionality long before they achieved global importance. The Jeunes Restaurateurs prefer to work with local producers and advocate biodiversity and the conscious use of food in production and preparation. In 2016, the association therefore founded the JRE-Genussnetz, which aims to promote cooperation with regional producers.

Admission criteria

The prerequisite for admission to the association is the recommendation of at least two active members, as well as a minimum age of 25 and a maximum age of 37 years. A young top chef must have worked as a freelance restaurateur for several years in order to be nominated and to be mentioned in at least three relevant restaurant guides. Employed cooks or independent owners of catering establishments who are not cooks themselves can also become members of the association. After the application, the nomination will be checked by the Presidium. Two members visit the candidate to get an impression of the technical knowledge and especially of his human side. It is not possible to join on your own initiative.

One remains a “Jeune Restaurateur” until he is 49 years old. Thereafter, one remains associated with the association until the age of 55 as “Table d'Honneur” and then as “Membre d'Honneur” (honorary member). In Germany there are currently 35 Jeunes Restaurateurs 15 Tables d'Honneur and 18 Membres d'Honneur.

Projects

JRE enjoyment laboratory

Selected members of the association meet for this workshop twice a year. The goal of the gourmet laboratory is to create innovative dishes that have never been on any menu. Trying, the constructive judgments of the colleagues and the mutual exchange are expressly desired.

JRE pleasure network

The Jeunes Restaurateurs consistently focus on sustainability, seasonal freshness and regional products. In the JRE Gourmet Network, the chefs have been cooperating with currently more than 50 selected producers of regional and sustainable food since 2016. The association and its partners thus underline their joint commitment to sustainability , regionality, seasonality and the conscious use of high-quality food. The joint project of the pleasure network: to guarantee the best quality in harmony with nature.

JRE pleasure academy

The main concern of the Jeunes Restaurateurs is to promote the next generation. The JRE-Genuss-Akademie started in 2016 in cooperation with the DEHOGA Academy in Bad Überkingen. In addition to the regular vocational school lessons, the trainees from the JRE companies receive a total of 60 additional teaching units in the academy. At the end of the training there is both the IHK examination with the mandatory written and oral part as well as a specially developed practical JRE additional examination.

JRE Patisserie Cup

At the JRE Patisserie Cup , teams of young pâtissiers compete annually for the best dessert . Within two hours, a creative and modern dessert must be prepared from given products that harmonize perfectly with other given products. The dishes will be judged by an expert jury, who in 2019 u. a. Bernd Siefert, Thomas Ruhl and Christian Hümbs were members.

Board

The Jeunes Restaurateurs board consists of several volunteer members. You take on organizational and representative tasks and take care of communication within the association. Alexander Huber has been President of the Association since 2018 . The office of Vice President is Alexander Dressel , Treasurer is Sebastian Hadrys.
