Ewald Plachutta
Ewald Plachutta (born June 16, 1940 in Vienna ) is an Austrian cook and cookbook author . He was the owner of several top restaurants.
Life
In 1945 Ewald Plachutta moved with his parents to Mautern in Styria, his mother's homeland. After school he began an apprenticeship as a chef at the Grand Hotel Wiesler in Graz . At the age of 21 he became head chef at the Hotel Astoria in Vienna. At the Culinary Olympics in 1968 in Frankfurt am Main , Plachutta won the gold medal and a special prize as a member and team boss of the Austrian national culinary team.
In 1991 he was named Chef of the Year by Gault Millau . In the following year he was awarded three toques and received the Trophee Gourmet from A La Carte Austria . In 1993 Ewald Plachutta was awarded a Michelin star . He is considered the chef who initiated a renaissance of traditional Viennese beef cuisine with their classic dish boiled beef .
In 2003 he was awarded the Golden Decoration of Honor of the City of Vienna, and in 2005 he was awarded the professional title of Professor . In 2013 he was recognized by the Falstaff wine journal for his life's work. In 2020 he received the Golden Town Hall Man from Mayor Michael Ludwig .
Restaurants
With the purchase of the top Viennese restaurant 3 Husaren , Plachutta went into business for himself in 1979. Plachutta was a co-owner of the restaurants Grotta Azzurra and Hietzinger Bräu , the latter, opened in 1987 and now called Plachutta Hietzing , he took over as sole owner in 1993. In the same year the Plachutta Wollzeile was opened in the old town of Vienna and the following year the Plachutta Nussdorf in Vienna-Döbling. He has now handed the restaurants over to his son Mario Plachutta.
In 2014, the company got into the media for the treatment of employees and non-compliant layoffs.

Plachutta's daughter Daniela was married to Heinz-Christian Strache from 1999 to 2006 .
