Josef Viehhauser

Josef Viehhauser (born August 4, 1950 in Sankt Johann im Pongau ) is an Austrian cook and restaurateur. Along with Eckart Witzigmann, Viehhauser was one of the pioneers of purist nouvelle cuisine in Germany. The Gault Millau evaluated the kitchen cattle Hauser occasionally, with 19 points.

Life

Josef Viehhauser grew up at his parents' mountain inn Herkuleshof in Kolbnitz . He completed an apprenticeship as a cook in Bad Hofgastein and then worked in the orangery in Düsseldorf and with Hans-Peter Wodarz in Munich . In 1976 he started as head chef at Landhaus Dill in Hamburg .

In February 1978 Viehhauser set up his own restaurant Le Canard on Martinistraße in Hamburg-Eppendorf . The restaurant was awarded a star in the Michelin Guide after just nine months . In 1989 Le Canard was moved to a building on Elbchaussee designed by the architect Meinhard von Gerkan . In 2004 the company, which had grown into a group of companies, had to file for bankruptcy. After that, in addition to publishing cookbooks, he initially worked as a consultant and also as a guest chef at various events. From December 2011 to 2014 he was head chef at the Marbella restaurant in Hamburg-Winterhude.

In November 2014 he cooked in the Schmilinsky wine bistro in the Aussen Alster Hotel in Hamburg-St.Georg.

In the 1980s and 1990s, Josef Viehhauser was the teacher of a whole generation of highly respected cooks, including Michael Hoffmann , Johann Lafer , Hartmut Leimeister , Kolja Kleeberg , Heiko Nieder , Manfred Stocker , Alexander Tschebull , Jörg Wörther , Marc Mueller and Rainer Wolter .
