Michael Hoffmann (born October 30, 1967 in Dillenburg ) is a German cook and gardener.

life and work

In 1992 he became sous chef at the Wald- & Schlosshotel Friedrichsruhe with Lothar Eiermann in Öhringen . Then he cooked for Eckart Witzigmann and Josef Viehhauser .

In 2000 he became head chef of the starred restaurant Margaux in Berlin , in 2003 he became the owner. Hoffmann has renewed top gastronomy with its vegetable kitchen . “Vegetarian has become too much of a fighting term. That's why I speak of vegetable cuisine. ”He offered vegetable menus with up to eight courses. He mainly uses herbs instead of spices to flavor his dishes. He personally checked the producers of most of his products on site. For ethical reasons he refrains from processing foie gras (foie gras) and tuna as well as fish that are spawning. In 2010 he was named Chef of the Year by the editorial team of the specialist magazine Der Feinschmecker . In 2010, the gastronomy critic Wolfram Siebeck described Hoffmann's restaurant as “Berlin's most avant-garde cuisine”. Hoffmann lives in Berlin. He has been growing his vegetables himself in his own garden in the Berlin area since March 2010. In 2012 there were around 140 types of vegetables and herbs.

In February 2014 Hoffmann closed his restaurant Margaux Berlin . He describes his exit from top gastronomy as a liberation. He felt a “certain ignorance” with the Michelin Guide . "When the testers were there, as we know them, it became clear: They don't eat the vegetable kitchen." After the death of the organic baker Peter Klann, he bought his SoLuna bakery in Berlin-Kreuzberg in spring 2014 , which now also offers pickled vegetables offers his garden. In July 2014 he took over the canteen in the Markthalle Neun in Kreuzberg, a former railway market hall , with "vegetable-heavy, honest, home-style cuisine in the best sense of the word", where a plate dish cost no more than 12 euros.

In 2015 he left the canteen nine and has been working as a consultant in the catering industry ever since. He is Corporate Executive Chef at Hapag-Lloyd Kreuzfahrten , for whose cruise ships he develops and establishes new culinary concepts.
