Helmut Thieltges

Helmut Thieltges (born September 24, 1955 in Dreis ; † July 26, 2017 ) was a German chef . His restaurant Sonnora in Dreis has been awarded three stars by the Michelin Guide 18 times since 1999.

Thieltges was the only child of the innkeepers Vinzenz and Maria Thieltges, who ran the Pension Elisabeth in Dreis . After his apprenticeship with the Roman Emperor in Trier , he moved to the Schlosshotel Pontresina near St. Moritz in 1973 , then to the Breidenbacher Hof in Düsseldorf and in 1977 to the Bastei restaurant in Cologne . Since 1978 he has been cooking in the family-owned Waldhotel Sonnora, which is located in a forest on the edge of Dreis.

Thieltges hardly gave interviews, did not publish any cookbooks and just wanted to concentrate on his work. Nonetheless, he was able to enjoy not only German guests but also guests from Belgium , Luxembourg and France . At first he started with the normal program of a dining restaurant, today his cuisine is praised for its "standard-setting precision".

He said of his culinary art:

“Classical is the real art. That is the basis of everything. Anyone can call themselves modern who wants to do something different with violence. "

Helmut Thieltges died in July 2017 at the age of 61 after a brief serious illness. His successor as head chef was Clemens Rambichler (* 1988), who has been part of the team since 2011. Thieltges leaves behind his wife Ulrike and a son. The couple met in the restaurant, where she works as a restaurant manager.

In 1982 the Michelin Guide awarded the Sonnora restaurant its first star, followed by the second star in 1991, and since 1999 Thieltges' cuisine has been regularly rated with three stars. The Gault Millau awarded Thieltges 1998 as "Chef of the Year" and the restaurant Sonnora with four domes and awarded the highest score Rated (19.5 / 20 points). The magazine Der Feinschmecker gave the restaurant a 5 out of 5 F, and the Schlemmer Atlas also gave it the highest rating (5 cooking spoons).
