Martin Dalsass

Martin Dalsass (born October 2, 1956 in Deutschnofen , South Tyrol ) is an Italian cook and specialist book author, also known as the olive oil pope of Switzerland .

Career

Martin Dalsass completed his apprenticeship as a chef at the Hotel Laurin in Bolzano . From 1980 he was head chef at the Hotel Bellevue in Gstaad for five years . In 1985 he opened the Santabbondio restaurant in Sorengo near Lugano , which was awarded a Michelin star and 18 Gault Millau points . From 2006 to 2010 he was also an advisor at the Chlösterli restaurant in Gstaad.

In autumn 2011, after a lengthy renovation phase, he and his wife took over the Talvo restaurant in Champfèr ( GR ) (18 points in Gault Millau and 1 star in the Michelin Guide).

In 2007 he published a specialist book on olive oils together with Philipp Notter.
