The Talvo restaurant is a gourmet restaurant in a historic building in Champfèr in the Upper Engadin , Switzerland , which was once part of the Badrutt's Palace .

The Talvo, as it is called in short, enjoyed its first heyday in the 1960s and 1970s, when the international jet set St. Moritz discovered for himself and people like Gunther Sachs , Brigitte Bardot and Mohammad Reza Pahlavi to the regular guests of the Talvo included .

The large Engadin farmhouse on Via Gunels, which houses the Talvo ( Rhaeto-Romanic in the idiom Puter : barn), was built in 1658. It is considered to be one of the oldest still preserved Engadine houses in the region. From 1880 to 1887 the house housed the comprehensive school of Champfèr with seven students who were looked after by teacher Luzi Battaglia. The house was then owned by the local Walther family until 1949, which is why the house was also called Chesa Walther . A total of four generations of the Walther family lived in the farmhouse, all of whom made a living from agriculture. The fourth and last generation of the Walther family began renting rooms in the spacious house to tourists.

The biggest change in the history of the historic farmhouse came after the property was sold in 1949 to Eduard Morger, a doctor from Rüschlikon on Lake Zurich, who also bought the Hotel Bristol , Villa Granita and Villa Nice at the same time . Eduard Morger had the Chesa Walther converted into the Talvo restaurant in 1954 , with the restaurant wing being housed in the former barn, the farmhouse, the Talvo, and furnished the Talvo with paintings from his private art collection. After the renovation, the property had 30 guest beds.

The Talvo has developed into a meeting place for the après ski society . In the following years the Talvo was modified and expanded several times. In 1960 the new terrace was built on the south side of the house. The following year, the basement and the ground floor were converted and expanded. 1968 saw the biggest structural change to the house since the property was converted in 1954: an extension on the south side of the house to enlarge the restaurant wing.

At the beginning of the 1990s, the married couple Roland and Brigitte Jöhri bought the Talvo and ran the restaurant as Jöhri's Talvo . In 2000 Götz Rothacker became head chef, who was awarded two Michelin stars under him. The Jöhri couple sold the Talvo in 2011.

On December 1, 2011, Martin Dalsass and his wife Lorena took over the Talvo as tenants , which has since been called Talvo by Dalsass and has been awarded 18 Gault-Millau points and one star by the Michelin Guide .
