Benoît Patrick David Violier (born August 22, 1971 in Saintes , Charente-Maritime , France ; † January 31, 2016 in Crissier , Switzerland ; authorized to reside there) was a French-Swiss chef . In 2012 he took over the management of the Restaurant de l'Hôtel de Ville in Crissier from Philippe Rochat .

Career

As a child, Benoît Violier discovered the joy of cooking. From 1987 to 1990 he completed a double apprenticeship as a cook and confectioner-confectioner-chocolatier under his teacher Didier Stéphan. After completing his apprenticeship, he gained experience in Bordeaux , Toulouse and Senlis . In 1991 he was drawn to the great French chefs in Paris . He was a student of Joël Robuchon , Frédy Girardet and Philippe Rochat. He worked under Benoît Guichard, Bruno Gricourt, Sylvain Knecht, Jean Phillipon, Frédéric Anton and Eric Bouchenoire.

In 1996 he moved to Frédy Girardet's restaurant of the same name, which was awarded three Michelin stars , in Crissier near Lausanne . It stayed with the restaurant when it was sold to Philippe Rochat that same year and given the name Restaurant de l'Hôtel de Ville . In 1999 he became head chef and the following year he was awarded the title of Meilleur Ouvrier de France (Best Artisan in France).

In April 2012, Benoît Violier took over the management of the restaurant together with his wife Brigitte. After the takeover, the restaurant was immediately awarded three Michelin stars, which it has held since 1998.

Violier died of suicide in late January 2016 at the age of 44 . He left behind his wife and a son.

His wife Brigitte Violier announced that she would continue to run the restaurant. Since then, Franck Giovannini has been the chef there .
