Frédy Girardet

Frédy Girardet (born November 17, 1936 in Lausanne ) is a Swiss chef . His restaurant Girardet , which he opened in his hometown of Crissier in 1971 , was awarded three Michelin stars and was also considered one of the best in the world under the leadership of his successors.

Life

His father Benjamin Girardet had cooked for many years at the Hôtel Central Bellevue in Lausanne and then opened a bistro in Crissier. Frédy Girardet was trained in the restaurant Le Grand Chêne , but initially aimed at a career as an athlete. Then he had a key experience in Pierre Troisgros ' Burgundy restaurant that convinced him to become a chef. When his father died unexpectedly at the age of 56, he took over his bistro. In 1971 he opened a restaurant which he named Girardet after himself .

It was there that Girardet began with classic French cuisine, which he refined in an innovative and light way and thus developed the style of nouvelle cuisine together with other contemporaries . Girardet was awarded the title Chef of the Century by Gault-Millau , which only three other chefs in the world carry ( Paul Bocuse , Joël Robuchon and Eckart Witzigmann ). Girardet's students included Benoît Violier and Léa Linster . In 1996 Girardet sold the restaurant to Philippe Rochat , who had been its head chef since 1989 .

Awards

In 2006 Frédy Girardet received the Eckart Witzigmann Prize for his life's work.
