Tantris
The Tantris is a restaurant in Munich in the Schwabing district . It has been awarded at least two Michelin stars since 1974 and has been one of the 15 best restaurants in Germany ever since.
building
The building was built by contractor Fritz Eichbauer and opened in 1971. The architect of the building is the Swiss Justus Dahinden , the concrete sculptures are by the Swiss artist Bruno Weber . In 2004, the interior was faithfully restored by Stephan Braunfels . In 2012 the building was placed under monument protection. In 2013, an exclusive light object was added to his interior in collaboration with Danilo Silvestrin . Felix Eichbauer, the founder's son, received the Bavarian Monument Protection Medal in 2017 for the unchanged preservation of the restaurant . In addition, the adjacent high-rise residential building was placed under monument protection at the beginning of 2019. Since, from the point of view of the experts, both buildings form a structural unit, they are listed in a joint entry in the list of monuments.
In October 2019 it became known that the necessary renovation of the building would require almost 10 million euros and that the continuation of the restaurant was questionable.
Chefs and restaurant
From 1971 Eckart Witzigmann was the first chef to cook one Michelin star in 1973 and two in 1974 for the Tantris , the highest distinction ever given in Germany at the time.
In 1978 Witzigmann moved to his own restaurant "Aubergine", which in 1979 was the first German restaurant to be awarded three Michelin stars . The kitchen in Tantris was taken over by Heinz Winkler and in 1981 was the second German restaurant to receive three Michelin stars. It kept that for ten years until Winkler opened his own restaurant in Aschau im Chiemgau .
Since 1991 Hans Haas , who was sous chef at Witzigmanns “Aubergine” from 1982 to 1987, has been in charge of the kitchen. He has since kept the Tantris at the high level of two Michelin stars. The Gault-Millau awards 18 points, the restaurant guide Der Feinschmecker even the highest rating (five “Feinschmecker-Fs”).
According to an announcement by Tantris in May 2019, Hans Haas will be leaving the restaurant at the end of 2020. Alain Ducasse's previous corporate boss , Matthias Hahn , will be the new Executive Chef . Among other things, he should develop new business areas for the restaurant. At the beginning of 2021, it will be announced who will be operationally in charge of the kitchen after renovating the restaurant.
The Tantris wine cellar holds 35,000 bottles and was looked after by sommelier Paula Bosch from 1991 to June 2011 .
Felix Eichbauer, the son of the founder, has been managing director of Tantris since 2006 . In 2011 the company's 40th anniversary was celebrated.
Former sister companies
From 1978 to 2013 there was the Bistro Terrine in the Amalienpassage in Munich, which has repeatedly been awarded a star, most recently under head chef Jakob Stüttgen .
From 2011 to 2014 there was the Tantris Standl in the Schrannenhalle in Munich. Then there was the Tantris Natural Winebar until 2015 .
