Inari-zushi

Inari-zushi ( Japanese 稲 荷 寿司 ) is a tofu bag filled with rice and is part of Japanese cuisine .

Sushi rice, d. H. Rice soaked in vinegar, wrapped in tofu. The tofu pocket is then fried in oil. Depending on the region, other ingredients are added such as shiitake mushrooms, carrots , Japanese salsify ( gōbo ) or roasted sesame ( irigoma).

Inari refers to the fox deity Inari whose messenger foxes ( kitsune ) are said to have a preference for fried tofu ( aburaage ).

Inari-zushi is usually eaten cold with chopsticks. It is therefore often part of bentos.

history

Inari-zushi is first mentioned in texts from the late Edo period , such as the Morisada Mankō ( 守貞 謾 稿 ) in which the customs of the then three largest cities Edo ( Tokyo ), Kyoto and Osaka were described.
