Jacobsen Vintage 3

from Wikipedia, the free encyclopedia

Jacobsen Vintage 3 is one of the most expensive beers in the world. It is made by the Carlsberg brewery in Denmark.

In Denmark it costs around 2000 Danish kroner per bottle (around 275 €).

Manufacturing

First, the usual ingredients, as is common with all other beers, barley - malt and water, are mashed and the wort is boiled with the hops , then yeast is added to the wort . According to its own information, the Carlsberg Brewery does not use any particularly expensive raw materials, only commercially available ones.

The product has an alcohol content of 16%. In order to achieve this alcohol content without distilling the beer, it is necessary to always add new brewer's yeast to the green beer over a long period of time and to drain the old, dead yeast from the bottom of the fermentation tank in a strictly controlled manner at very specific times.

This measure is based on the fact that natural yeast dies with an alcohol content of 12% in green beer and is therefore no longer able to convert any more sugar into alcohol. In addition, the taste of the beer spoils if the dead yeast remains in the green beer for too long ( autolysis ).

After this brewing process has been completed, the beer is stored in oak barrels for a long time in order to create a typical barrique taste.
