Kakigōri ( Japanese か き 氷 or 欠 き 氷 , dt "scraped ice") is a Japanese sweet and ice cream preparation.

The popularity of the food is expressed, among other things, in the fact that there are special Kakigōri festivals ( か き 氷 祭 り , kakigōri matsuri ) in Japan .

Manufacture and varieties

The actual ice cream is made using a Kakigōri machine ( か き 氷 機 , Kakigōriki ), in which a block of ice is clamped, from which a blade then scrapes off pieces of ice so that a loose accumulation of flakes is created. The machines, which can also be found in many households, are traditionally crank-operated, but modern variants are electric.

The ice cream is then usually eaten with syrup , in flavors such as strawberry, cherry, lemon, grape, melon, green tea, Blue Hawaii ( Curaçao ) or combinations thereof. Condensed milk is then added to this for further sweetening . As a side dish and fruit or Anko (coming to kakigori 餡子 ) ( red bean paste ).

Names

Kakigōri has different names in different regions of the country. B. Senji ( せ ん じ ) in Chūbu , Mizore ( み ぞ れ ) in Kyūshū or Kachiwari ( か ち 割 り ) in Kansai .
