Water ice ( stick ice cream) is a type of ice cream that consists mainly of water and sugar . In addition, it may contain a small amount of fat (mostly vegetable), some auxiliary substances ( e.g. acidulants such as citric acid ) as well as coloring and flavoring substances .

Water ice does not need to be stirred during the freezing process. It has a lower hardness than frozen water, since the sugar content and the other ingredients prevent the formation of large crystal structures .

In some cases, water ice is sold by the manufacturers in liquid form, so that it has to be frozen by the seller or by the consumer himself, which means that there is no need for expensive cooling during transport. This distribution process is also made possible by the fact that water ice does not contain any perishable ingredients and therefore does not require cooling.

Stick-shaped water ice can have very different names, depending on the manufacturer: lick drinks, (self) freezable cold drinks, scratch drinks, water ice strips or tube ice.

According to the German Food Labeling Ordinance , water ice (simplified here) is defined as follows: less than 3 percent fat, at least 12 percent dry matter content from flavoring and / or sweetening ingredients.
