Karlovy Vary cuts

As Carlsbad cuts refers to various varieties of ham sandwich. The name is derived from the city of Karlovy Vary and the name Schnitte for a slice of bread or a sandwich.

A common variant consists of slices of mixed bread coated with butter and tomato or paprika paste. Several slices of cooked ham are placed on top and gratinated with slices of sliced ​​cheese and butter. Finally you top the bread with tomato slices and herbs. In variants of this, raw ham is used and the tomatoes are au gratin. The mixed bread can be replaced with toasted white bread , the ham with roast pork . Worcestershire sauce or lemon juice is often used to season them before consumption .

Another variant of a ham sandwich baked with cheese is the Hawaii Toast ; Both dishes were popular in the GDR , but the Karlovy Vary cuts were more widespread in everyday cuisine . According to the journalist Heidi Driesner, the Karlsbader Schnitzel was not, as is often claimed, the replacement for the Hawaii toast.
