Kolatsch (Kołacz / Колач)

Kolatsch (Polish: Kołacz ; Ukrainian: Колач ) is a round traditional pastry of Polish and Ukrainian cuisine , the origin of which goes back to the culture of the Old Slavic times. Originally the Kolatsch was a wedding bread made from wheat and later developed into a yeast cake , which is now also valued independently of wedding celebrations.

The Polish Kolatsch is a round yeast cake that can come out of the springform pan or is shaped by hand. Its filling usually consists of white cheese or poppy seeds or both at the same time. Usually the filling is exposed, with streusel often being used as a topping, although a dough lattice decoration is more typical. In the covered version, the cheese or poppy seed filling is hidden inside the cake.

etymology

The name Kolatsch ("Kołacz") has the same root as the word koło ("wheel") and indicates the round shape of the baked goods. In Russian the pastry is called Калач ( Kalatsch ) and in Ukrainian Колач ( Kolatsch ). In Croatian, the expression kolač , just like in Czech and Slovak ( koláč ), simply means "cake". The German name is "Kolatsche".

history

The original Slavic Kolatsch was a round bread pastry and has survived to this day in this form, often decorated with a cross. It was given to newlyweds for their wedding.

In Poland and Bohemia , the bread developed into a sweet cake, which was extremely popular not only with the Polish nobility and was even sung about by poets in the 16th century.

The Bohemian - Austrian Danish pastry Kolatsche also goes back to the Kołacz, the name was borrowed from the Czech.
