Kong Hans Kælder

Kong Hans kælder or Kong Hans for short is a restaurant in the Danish capital, Copenhagen. It is located in the vaulted cellar at Vingårdstræde 6. The building is a former merchant's house, the lower floors of which date from the 15th century and which is a listed building. From 1983 to 2014 and since 2016 it was and is awarded one star in the Michelin Guide .

Name of the restaurant

The name of the restaurant can be traced back to the fact that in 1510 King Hans ordered grapes from the court to Kalundborg Slot .

History of the restaurant

The restaurant was founded in 1976 by the couple Lene and Sven Grønlykke and the couple Inge and Klaus Rifbjerg . The Grønlykkes had already bought the Haarby Mejeri in 1969 and launched it as Løgismose Mejeri. In 1970 they bought and renovated the Falsled Kro, where Michel Michaud and Jean-Louis Lieffroy had been the chefs since 1971 . They also founded the company Løgismose. Since its inception, the restaurant has had four chefs: from 1976 to 1980 Michel Michaud (born 1946), from 1981 to 1996 Daniel Letz (born 1956) and Thomas Rode Andersen (born 1968) from 1996 to 2014.

Under Daniel Letz, the restaurant was awarded a Michelin star in 1983, which it lost again in spring 2014. Thomas Rode Andersen changed the restaurant's cuisine, which otherwise relied on classic French cuisine, by introducing elements of Stone Age nutrition and, for example, removing bread and sugar from the menu. Mark Lundgaard has been the head chef since September 1st, 2014. He returned to French cuisine. In 2016 the restaurant received another Michelin star.

Economic situation

Since June 21, 1999 the restaurant has been a public limited company. For 2006 a profit of 770,000 DKK is reported. At the time, the restaurant offered space for 60 guests. A 2011 article stated that the restaurant had equity of DKK 800,000 and debts of DKK 2.6 million. In 2009 the profit after tax was 23,000 DKK and in the following year of around 197,000 DKK. The Kong Hans has been a member of Relais & Châteaux since 2008 . In summer 2014 the restaurant was renovated, including the kitchen, and reopened on September 15th, now with 12 employed chefs. In 2016, Flemming Skouboe, who also owns Henne Kirkeby Kro , bought Kong Hans Kælder from the Løgismose Meyer company.

In 2014 a Danish documentary film called Restaurant Kong Hans - Drømmen om stjernerne was released , which shows the then 30-year-old Mark Lundgaard on his hunt for the lost Michelin star.
