Kouign-amann [ , kwinja'mɑ̃nː ] is a popular French cake, a regional specialty of the town of Douarnenez in Brittany, where it is offered in many bakeries / pastry shops and at markets.

The Kouign-amann is a kind of round and thick flatbread. It consists of a coarse puff pastry made of alternating layers of bread dough, salted butter and sugar . During the slow baking, butter and sugar penetrate the individual layers of dough and give them a delicately melting texture. Sugar and butter that collect at the bottom, caramelize there and form a tasty crust.

The size of the cake can vary - for 4 to 12 people. But it is also made as a small cake for one person, then wrapped as a rolling pin that is cut into slices and baked. There are also variations with apple filling or chocolate filling.

The whole cake has a thick, crispy surface that is heavily caramelized.

The name comes from the Breton word for cake ('kouign') and butter ('amann'), which means simply butter cake .
