A kettle grill ( engl. : Kettle grill or kettle BBQ ) is a with charcoal or propane gas fired grill with lid, of the shape of the cooking chamber here to a ball or to a boiler (engl .: kettle reminiscent).

The American George Stephen built in 1952, inspired by the shape of a buoy , the first kettle grill in the shape we know today, consisting of the bowl-shaped lower part - called the kettle - and the lid with handle and ventilation openings. To date, this type of kettle grill (kettle, lid, ventilation) has changed little. Changes mainly concerned aspects of operation, durability or safety, such as heat-resistant, insulating handles, enameling of the kettle and lid and an ash pan with ventilation control (depending on the model).

The company Weber-Stephen Products LLC , founded by George Stephen and known by its brand name “Weber Grill”, can be regarded as a pioneer and market leader in the field of kettle grills on the world market . There are also kettle grills from numerous other manufacturers.

As a rule, a kettle grill consists of a kettle-shaped lower part that is mounted on a (widely mobile) frame with adjustable ventilation in the floor. In the lower part of the boiler there is a charcoal grate and a grill grate at the level of the upper edge. With gas-fired models, one or two ring-shaped, individually adjustable gas burners are installed instead of the coal grate.

The lid has a flatter curve than the lower part and has adjustable ventilation openings and a handle. Depending on the equipment and manufacturer, a thermometer is also built into the lid to check the cooking space temperature.

The main difference between a kettle grill and an open grill is the lid and thus the possibility of indirect grilling . With this form of preparation, the grilled food is not cooked directly over the embers or the gas flame, but rather through heat radiation reflected from the lid and the hot air in the grill, which is closed (except for the air inlet and outlet openings), similar to cooking in a convection oven . In contrast to grilling on the open wire rack, this cooking method allows you to cook large pieces of roast or whole poultry .

The adjustable ventilation openings in the bottom and lid of the kettle allow very precise temperature regulation by controlling the air supply to the charcoal embers. Gas-powered models have regulators for this in the gas supply to the burner.
