La Ratte is an old French variety of potato . The perennial flowers pink to purple. The relatively small, medium-early ripening potatoes have a thin yellow skin and yellow flesh with a nutty taste and are elongated to croissant-shaped. The variety was pushed out of the market for a long time because it is not very productive and quite susceptible to pest and fungal attack, for example by Phytophthora .

La Ratte is considered to be a very high-quality table potato, which is why it has been grown as a high-priced product since the 1990s in small quantities for the gourmet market. The growing areas are mainly in northern France, mainly in Brittany , but now also in Denmark and Germany . A protected brand name is La Ratte du Touquet from the area around the municipality of Le Touquet-Paris-Plage in northern France .

The waxy variety is particularly suitable as an accompaniment to asparagus , but also as a hearty combination prepared as fried or jacket potatoes with curd cheese , Camembert or Munster cheese and suitable for potato salads.
