The restaurant is known for its duck dishes. The recipe for the Canard Tour d'Argent (Duck Tour d'argent) was conceived in 1890 by the then owner of the restaurant, Frédéric Delair. Great care is taken in every detail of the dish, from rearing the ducks to preparing them and serving. The sauce is prepared from duck carcass and liver with the help of a duck press on the table .

The wine cellar contains almost 440,000 bottles, which are divided into 15,000 references. Claude Terrail, the son of the landlord at the time, walled up 20,000 of the most valuable bottles in the back of the cellar in June 1940, shortly before the German occupiers marched into the open city of Paris. Soon afterwards, a personal representative of Göring came to the Tour d 'Argent to confiscate old wines, especially those from the 19th century, for Göring .
