Ernst Pauli (cook)

Ernst Pauli (born January 5, 1886 in Toffen , † June 9, 1960 in Stans ) was a Swiss cook and author .

Life

Following his commercial apprenticeship, Ernst Pauli completed an apprenticeship as a chef at the Hôtel du Grand Pont in Lausanne and from 1919 worked as a chef at the Swiss Hotel Management School in Lucerne . From 1937 to 1956, Ernst Pauli was the restaurateur of the Aarau station buffet . In 1955 he became an honorary member of the Swiss Innkeepers' Association.

Ernst Pauli wrote numerous publications, including the standard work Textbook of the Kitchen , first published in 1930 , which was originally based on recipes by Auguste Escoffier and was further developed by Pauli's son Eugen and his son Philip.

With the 11th edition in 1992, the Pauli was divided into two volumes (textbook and recipe book with a total of 1500 recipes) and provided with photos. The 13th edition appeared in 2005 and has been redesigned. It is the most important textbook for teaching cooking in Switzerland.
