Matsumaezuke

Matsumaezuke ( Japanese 松 前 漬 け ) is a pickled dish of Japanese cuisine from the Matsumae area of the island of Hokkaidō .

It is made from fresh ingredients from Hokkaido. Surume (dried squid) and Konbu is wiped with a damp cloth and cut with scissors into thin strips. Kazunoko is cut into small pieces, carrots and ginger into even smaller and thinner strips. These ingredients are mixed with a marinade made from sake , soy sauce and mirin that has been cooked once . Several strips of chilli can be added. Then the whole thing is marinated in a cool place for a week until it is ready to eat.
