Mirza Ghasemi (also: Mirzā-Ghāsemi , Persian میرزاقاسمی) is a Northern Iranian starter based on eggplant . The aubergines are baked or grilled in tandoor , especially in the region around the Caspian Sea . Originally from Gilan , it is mainly prepared in Māzandarān and Golestan .

The eggplant puree removed from the pods is mixed with garlic , tomatoes, turmeric , fat (such as oil), salt, pepper and eggs. Bread ( Nān ) and / or rice are also served.

A variant that is prepared with zucchini instead of aubergine is called Kadoo (Mirza) Ghasemi .
