Moos cake

Moss cake is a cake whose topping is sprinkled with ground coffee and then takes on a moss green color. The effect occurs because the chlorogenic acid contained in coffee reacts with the protein of the topping.

Manufacturing

The cake consists essentially of a chocolate dough, which is coated with a topping of egg white , powdered sugar and coconut fat after cooling . Fine coffee powder is sprinkled on the topping, which has briefly hardened in the refrigerator, and the cake is then stored in a cooler room (no longer in the refrigerator) for about 24 hours.
