Nitir qibe

Nitir qibe ( Amharic : ንጥር ቅቤ , nət'ər qəbe , often also niter qibe ) or tesmi in Tigrinya , is a butter preparation that is used in Ethiopian cuisine . It has a long tradition and is one of the ingredients that are characteristic of the country's cuisine.

In its preparation, it is comparable to Indian ghee , but various spices ( garlic and ginger , as well as caraway , coriander , turmeric , cardamom , cinnamon or nutmeg ) are added during the boiling process. The clarified butter, which is still liquid, is then filtered. Nitir qibe, like Indian ghee, is heated longer than ordinary clarified butter and is therefore slightly browned and has a roasted aroma.
