Oven cheese
In German usage, oven cheese is a whole, smaller wheel of cheese baked in the oven . A soft cheese such as B. Camembert . The cheese is baked in an oven and then the crust is usually cut in a cross shape.
The term oven cheese is a trademark registered by the cheese dairy Champignon with the brand Rougette , but it is now used for oven cheese of all kinds ( deonymization ). It can be bought ready-to-serve in wooden boxes. It is a natural soft cheese (sometimes with other ingredients such as herbs, chilli and garlic ).
The oven cheese, partly seasoned with herbs and a dash of kirsch , is eaten by dipping small pieces of bread into the melted interior of the cheese wheel. In the Allgäu and Swabia , the oven cheese is also known as Roorkäsle and is prepared there with fruit brandy .
