Penne all'arrabbiata (for example, “pasta the angry / passionate way”) is a traditional pasta dish from Lazio .

For preparation, garlic is weighed very finely and steamed in olive oil until it takes on color. Then skinned, pitted and diced tomatoes and a chilli pepper are added and cooked for a few minutes. The chilli pepper can either be chopped up or added whole. Whole chillies can be removed from the sauce before serving. Finally, half-cooked penne is added and the noodles are cooked in the sauce while gently stirring. Penne all'arrabbiata are served with grated pecorino cheese .

If other types of pasta are used, one speaks depending on z. B. of spaghetti all'arrabbiata , maccheroni all'arrabbiata or pennette all'arrabbiata .
