Pepper oleoresin is a pepper - extract (depending on the additive in the name of black, white or green pepper).

The oleoresin contains the hot part of pepper, the piperine , and the aromatic part, the essential oil .

Manufacturing

In a first step, the essential oil is extracted by steam distillation . The extraction residue is then extracted once again with ethyl acetate , acetone and / or hexane in order to obtain the piperine. Then the two phases are mixed in the desired ratio. To reduce the inhomogeneity of the product, up to 10% propylene glycol or another emulsifier is usually added. The emulsifier used is decisive for the viscosity and thus for handling in production.
