Pepper sausage

Pfefferwurst is a hard sausage specialty from the Sauerland . It is mostly made from beef and rarely from pork. Some butchers also offer poultry and pepper sausage. Pepper sausages get their special taste when they are smoked . Thereby u. a. Peppercorns made to smolder.

Another ingredient in pepper sausage is mugwort and caraway . This gives it an unusually high proportion of vegetable oils for sausages.
