In the Austrian Salzkammergut, Pfiesel was the name of a brick-built, rectangular floor plan, about 2 × 5 m large, windowless chamber , the barrel vault of which reached a top height of about 2.5 m.

In order to remove the remaining moisture from the freshly formed truncated cone-shaped salt fudge sticks and thus to increase their inner cohesion, they had to be subjected to a drying process known as paving. The freshly formed bulbs were carried from the pancake house into the pebbles that were arranged around the pancake house. To dry the fudge , either the smoke drawn off the pan was used or a separate fire was maintained at the pebbles further away from the pan house. In each case the fuders were exposed to the smoke and were correspondingly blackened. "The rougher the wet Füderl came out of the runners, the easier it is for the fly ash and other dirt to settle during the drying process."
