Poissonnier

As a poissonnier (from French : poisson 'fish') is the name given to the fish cook in a kitchen brigade . He is responsible for the preparation of all fish dishes. He also takes care of crustaceans and shellfish as well as the sauces that go with them. Specialties are lobster and snail butter.

In small to medium-sized catering establishments, this work is often taken over by the saucier .
