Qâlat daqqa

Qâlat daqqa , Gâlat dagga or Tunisian five- spice is a blend of spices from Tunisia . It is also used in other North African countries, but above all in Morocco . It is mainly used to sharpen stews.

composition

Qâlat daqqa traditionally consists of grains of paradise , black peppercorns , cloves , cinnamon and nutmeg . The ingredients are ground to a fine powder and then mixed.

use

Qâlat daqqa is used to heat up dishes, mainly for stews and is an important ingredient in lamb tagine . Meat is rubbed dry with the spice mixture or marinated before roasting. In vegetarian dishes, especially those based on eggplant and pumpkin , the mixture ensures a warm aroma.
