Predicate wine
A predicate wine , formerly also "quality wine with predicate", is the highest quality level for wines .

According to German wine law , a distinction is made within this level between Kabinett , Spätlese , Auslese , Beerenauslese , Trockenbeerenauslese and Eiswein . The following conditions apply to all grades:
- The grapes used for production must all come from a single area (with the exception of the grapes used to produce the sweet reserve );
- The winemaking must take place in a specific German growing area, on approved vineyards and with approved grape varieties;
- Chaptalization is not allowed;
- Increasing the residual sweetness after fermentation with grape must of at least the same quality level is permitted ( Section 16 WeinV ); there are flavors from semi-dry to sweet;
- The natural minimum alcohol content (minimum must weight) determined by the respective state ordinance must be achieved;

The minimum must weight for the various predicates for quality wine with predicate varies depending on the growing area and grape variety . The following can be used as guide values:
- Cabinet: min. 73 degrees Oechsle
- Late harvest: min. 85 degrees Oechsle
- Selection: min. 95 degrees Oechsle
- Berry selection: min. 125 degrees Oechsle
- Ice wine: is made from overripe berries that are frozen, harvested and pressed at below −8 ° C. The berries are usually not attacked by botrytis and are frozen at a minimum of −8 ° C from harvest to pressing.

Until the 2007/2008 wine year, predicate wine was designated as a quality wine with a predicate.
Austria
According to the Austrian Wine Law , the following subgroups belong to the predicate wines of particular maturity and reading : Spätlese , Auslese , Eiswein , Beerenauslese , Ausbruch and Trockenbeerenauslese . All of them must not be improved (by adding sugar, chaptalization ), must come from a wine-growing area , their residual sweetness may only result from interruption of fermentation , they must be officially tested and have a test number; the year name is mandatory.
