Ramps

Rampen , also called Ramp , Rampangen , Rampanje , is a historical dish made from cattle innards , which was known in the 19th century in Westphalia , Hesse and Lower Saxony , under the name Rampanien in Thuringia today. The term ramps is a dialect expression for muzzle and rumen of beef , which were mostly cooked and consumed with vegetables.
