Russian zupfkuchen

Russian zupfkuchen

Russian plucked cake is a combination of chocolate and cheesecake with "plucked" chocolate dough flakes on the top. The base, rim and flakes are made from a kneading dough with a cocoa flavor , the filling from a batter with quark and usually a little lemon flavor. The recipe does not come from Russia, but was won at a Dr. Oetker Back Club submitted. The company introduced a corresponding baking mix in January 1993. The name was inspired by the dough flakes, which are said to remind of the spiers of Russian churches when unbaked. The television commercial played on this marketing idea by creating the impression that it was a traditional Russian recipe.
