Cream blower

from Wikipedia, the free encyclopedia

A cream blower is a device used in pastry shops and good bakeries to make large quantities of whipped cream .

It consists of a tall, cylindrical vessel and a motor, which is usually on rollers to make it easier to transport. The cylinder is placed on the designated place with a rubber seal. There is a removable iron grille in the cylinder.

If you put the cream in the cylinder and switch on the motor, air is blown into the cylinder from below through tiny holes. By turning the iron grating and the resulting centrifugal force , the fat bubbles in the cream are literally hit against the wall of the cylinder and whipped cream is created. With a cream blower you can make large amounts of cream within a few minutes.

Modern devices have a disinfection device that is operated with ozone.
