The small version of the Saint Honoré cake

As a Saint-Honoré-Torte ( French Saint-Honoré ) is a cake of French cuisine . The basis is a base made of shortcrust pastry (as a variant also puff pastry ) with an applied edge made of incendiary material . The edge is covered with filled or unfilled caramelized profiteroles , and in the center the cake is filled with a light vanilla cream, also called Saint Honoré cream.

The cake was named after Saint Honorius von Amiens (Bishop of Amiens), the patron saint of bakers.
