Sattu (food)

Sattu ( Hindi : सत्तू) is a flour made from roasted legumes or cereal grains, which is mainly used in North Indian and Pakistani cuisine. Since it is already roasted flour, it does not need to be reheated before consumption.

Manufacturing

Legumes or grains are roasted in a pot filled with sand, then sieved and finally ground. Traditionally, sattu consists of chickpeas or barley .

use

The roasted flour is used, for example, in the drink Sharbat , which is made from sattu, jaggery and lemon juice. Other examples are litti , grilled dough balls filled with spiced sattu or a variant of the flat bread Paratha , also with a filling made of sattu.
